I have always done organic production, but the CCPAE registration is from 2021 and the aim of doing organic is for ideals and respect for the environment, and in this way make the product healthier.
The ADV gives me the necessary advice to better understand the behavior of the crop and get a greater yield.
My project mainly consists of recovering barren olive farms, farms abandoned in the rural exodus of the 60s and 70s. My mission is to recover varieties of olives from Pallars Jussà with new sensory profiles and with a high content of polyphenols, being highly healthy oils. The fact that they are exclusively Pallarés oils means that there is a marked differentiation and customers can opt for new tastes and aromas.
